2006 Rock Wall Cabernet Sauvignon, Napa Valley
PRODUCTION NOTES
The grapes for this delicious wine were picked at optimal ripeness, and then fermented in a small tank using a cold-soak and pump-over technique. The must was then warmed to 70°F and subsequently inoculated with a Bordeaux yeast strain, with the vision of a complex and heady, traditional Cabernet Sauvignon in mind.
WINEMAKER COMMENTS
The fruit for this lovely wine was sourced from a long time family friend in the Yountville region of the Napa Valley, at the Holbrook Mitchell Vineyard. The finished wine is quite a mouthful, with plenty of cigar box, menthol, cassis, violet and a hint of spicy, cherry jam.
